A commercial kitchen sends fat, oil and grease down its drains every day. A grease trap catches it before it reaches the public sewer, where it sets hard, blocks pipes and causes overflows. In Christchurch, a trap that is not maintained can cost you more than a blocked drain: it can put your trade waste consent at risk.
We size and install grease traps, clear and jet the kitchen lines that feed them, coordinate pump-outs with approved operators and keep the service records your consent depends on.

What Christchurch's trade waste rules require
Christchurch City Council adopted its Trade Waste Bylaw 2025 on 7 May 2025, and it came into force on 1 July 2025, replacing the 2015 bylaw. Under it, businesses that discharge trade waste to the sewer need a trade waste consent. The main points for food businesses are:
- Permitted consents cover smaller discharges, under 1,245 cubic metres a year, that meet the bylaw's Schedule 1A, which includes cafés and restaurants
- Larger discharges, or those outside Schedule 1A, need a conditional consent
- Consents usually run for one to five years and do not transfer to a new owner
- Grease traps are pre-treatment devices and must be maintained and cleaned
- Waste must be removed by an approved operator and taken to an authorised processing plant
- Neglect can make the owner liable for sewer damage, and the consent can be withdrawn
How often should a grease trap be cleaned?
The council's bylaw does not set a single cleaning interval in the material we have seen, so the answer depends on the trap size, your menu and how busy you are. A small under-sink trap in a busy café may need attention far more often than a large in-ground trap serving a light lunch trade. Your consent conditions, if they set a frequency, always come first.
The national grease trap guidelines written for trade waste officers recommend pumping out before fats and solids take up too much of the trap's volume, because a full trap lets grease straight through to the sewer. We check the depth of the fat layer and solids at each service and recommend a schedule based on what we actually find.
How It Works
What a plumber does, and what the tanker does
Grease trap work is usually split between two jobs. The full pump-out of a trap's contents, and its disposal at an authorised plant, is done by an approved liquid waste operator. A plumber handles everything around the trap: clearing and jetting the lines from sinks and dishwashers, fixing baffles, lids and seals, replacing damaged pipework and installing or upsizing traps.
We work with approved operators so you have one contact for both. After each visit you get a written record of what was done, the condition of the trap and anything that needs attention, which is exactly what you want on file if the council asks. We also handle hydro jetting of kitchen lines that keep blocking downstream of the trap.
Sizing and installing a grease trap
A trap that is too small fills quickly and lets grease through. Sizing depends on the flow from your sinks and dishwasher, the type of food and the time water needs to sit in the trap for fat to separate. The Building Code's Acceptable Solution G13/AS2 covers grease traps nationally, and the council may set conditions in your consent.
Installing or relocating a trap often means drainlaying work, and on flat Christchurch land with high groundwater, especially in the east, an in-ground trap and its pipework need careful bedding and sealing. On a new fit-out, whether in a rebuilt central city building or a shop in Riccarton, we plan the trap location early so it can be reached for servicing without closing the kitchen.
Signs your trap or kitchen line is struggling
Book a service before it becomes an emergency if you notice:
- Sinks and floor wastes draining slowly
- A rancid smell around the kitchen or the trap lid
- Grease visible in the gully trap or the inspection point after the trap
- Water backing up into the trap or floor wastes
- No service record for the last few months

Grease Trap Cleaning FAQs
Does my café need a grease trap in Christchurch?
Most food businesses that discharge fat, oil and grease to the sewer need pre-treatment such as a grease trap as part of their trade waste consent. The council's trade waste team can confirm what applies to your site.
How often does a grease trap need cleaning?
There is no single interval in the council material we have seen. It depends on trap size and how busy you are, and any frequency in your consent comes first. We recommend a schedule based on what we find.
Do plumbers pump out grease traps?
Pump-outs and disposal are done by approved liquid waste operators. We coordinate them and handle the plumbing, jetting and repairs around the trap.
Does my trade waste consent transfer if I buy a café?
No. Under the Christchurch bylaw, consents are not transferable to a new owner, so a new owner needs to apply.
What records should I keep?
Keep dated records of every clean and pump-out, who did it and the trap condition. We supply a written record after each visit.
Why does my kitchen drain keep blocking even with a grease trap?
The trap may be too small, overdue for a clean, or the line between the sink and the trap may be coated in fat. Jetting and a correctly sized trap usually fix it.
